Creating Northern Italian favorites must begin with authentic ingredients. Did you catch that many of them start with P? But there are others such as: Robiola cheese, Arborio rice, balsamic from Modena, Fontina from Val d'Aosta, olive oils and pesto from Liguria, tortellini from Bolonga, and Parmigiano Reggiano from the Emilia region. All of these are delicious enough to savor on their own merit; and certainly, we will. Imagine the delight when learning to recreate sensational Italian favorites.
